SPICY HUNGARIAN SAUSAGE GOULASH (LESCO)

This wonderful mixture of onion, tomatoes, yellow chilies, bacon, smoked sausage, and paprika is called Hungarian Lecso. Since I cannot pronounce Lecso, I call it a Spicy Hungarian Sausage Goulash, and it’s absolutely fabulous! If you haven’t tried Goulash before, then you must. Goulash is a “highly seasoned Hungarian soup or stew of meat and vegetables, flavored with paprika.” This recipe is simple, quick, and easy to make. The layers of flavor produced by these few ingredients are unreal: spicy, complex, and delectable. The result is equal to a gourmet recipe that has stewed for hours.

To serve, ladle the Spicy Hungarian Sausage Goulash over white rice, or if you prefer steamed potatoes on the side. Serve with a fresh salad dressed in a simple vinaigrette, and a warm baguette (to wipe your plate clean.) I posted a video of it simmering over on Instagram, it’s drool-worthy, ha!

Here Is How To Make It

In a large skillet heat olive oil and butter over medium heat; add onions and sauté until soft. Add bacon and sauté until slightly cooked; making sure not to crisp or overly brown the bacon. Add tomatoes; sauté until warmed throughout.

Add yellow chilies, Hungarian sweet paprika, and additional bacon fat; mixing well.

Add smoked sausage; mix well and increase heat to medium high. Bring to a boil, then reduce heat to low; simmer for 30 minutes.

Ingredients

  • 2 lbs whole peeled tomatoes (2 - 28 oz cans), drained and sliced
  • 2 lbs yellow chilies , cored and sliced
  • 1 large onion , diced
  • 3/4 slab bacon , diced
  • 1 1/2 tsp bacon fat
  • 1 1/2 tsp Hungarian Sweet Paprika
  • 4 Hungarian smoked sausages , sliced 1/4 inch thick
  • 1 tsp olive oil , for cooking
  • 1 tsp unsalted butter , for cooking
  • Salt and pepper , to taste
  • 6 cups white rice , prepared for serving
