2 lbs whole peeled tomatoes(2 - 28 oz cans), drained and sliced
2lbsyellow chilies, cored and sliced
1large onion, diced
3/4slab bacon, diced
1 1/2tspbacon fat
1 1/2tspHungarian Sweet Paprika
4Hungarian smoked sausages, sliced 1/4 inch thick
1tspolive oil, for cooking
1tspunsalted butter, for cooking
Salt and pepper, to taste
6cupswhite rice, prepared for serving
Instructions
In a large skillet heat olive oil and butter over medium heat; add onions and sauté until soft. Add bacon and sauté until slightly cooked; making sure not to crisp or overly brown the bacon.
Add tomatoes; sauté until warmed throughout. Add yellow chilies, Hungarian sweet paprika, and additional bacon fat; mixing well. Add smoked sausage; mix well and increase heat to medium high. Bring to a boil, then reduce heat to low; simmer for 30 minutes.
Serve Spicy Hungarian Sausage Goulash (Lecso) over white rice.
