Spicy Hungarian Sausage Goulash (Lecso)

Ingredients

  • 2 (28 oz cans) whole peeled tomatoes, drained and sliced
  • 2 lbs yellow chilies, cored and sliced
  • 1 large onion, diced
  • 3/4 slab bacon, diced
  • 1 1/2 tsp bacon fat
  • 1 1/2 tsp Hungarian Sweet Paprika
  • 4 Hungarian smoked sausages, sliced 1/4 inch thick
  • 1 tsp olive oil, for cooking
  • 1 tsp unsalted butter, for cooking
  • Salt and pepper, to taste
  • 6 cups cooked white rice, for serving

Instructions
