Spicy Hungarian Sausage Goulash (Lecso)

- 2 (28 oz cans) whole peeled tomatoes, drained and sliced
- 2 lbs yellow chilies, cored and sliced

- 3/4 slab bacon, diced
- 1 1/2 tsp bacon fat
- 1 1/2 tsp Hungarian Sweet Paprika
- 4 Hungarian smoked sausages, sliced 1/4 inch thick
- 1 tsp olive oil, for cooking
- 1 tsp unsalted butter, for cooking
- Salt and pepper, to taste
- 6 cups cooked white rice, for serving
