Over medium heat brown ground beef in a large skillet until cooked throughout, drain excess fat. Add finely diced onion and garlic, sauté a few minutes until translucent. Add crushed tomatoes, tomato paste, basil, Italian seasoning, salt, and pepper, mix well. Partially cover sauce and simmer on low for 15-20 minutes or until sauce has thickened, stirring occasionally.
In a separate bowl combine the ricotta or cottage cheese, parmesan cheese, eggs, and parsley, stirring well.
Spread about 1/2 cup of meat sauce in a greased 13 x 9-inch baking dish. Then layer half of each; noodles, cheese mixture, mozzarella cheese, and meat sauce. Repeat layers as your baking dish allows. Cover and bake at 350 degrees for 30 minutes; let stand for a few minutes before serving.
