Old Fashioned Oatmeal Cookies With Vanilla And Cinnamon
1cupunsalted butter(2 sticks), softened
1cuplight brown sugar, firmly packed
2cupsold-fashioned rolled oats
Cream butter and sugars until smooth, beat in eggs and vanilla.
In a separate bowl add flour, cinnamon, baking powder, baking soda, and salt. Mix ingredients together until well combined.
Add flour mixture into creamed mixture and blend together thoroughly. Stir in oats.
Chill batter for 20 minutes (optional). Preheat oven to 375 degrees and prepare your baking sheet. Grease baking sheet, or use nonstick foil, parchment paper, or a Silpat liner.
With a teaspoon or a small ice cream scooper, place a rounded teaspoon full of cookie dough on prepared baking sheet, allowing room to spread.
Bake for approximately 10 minutes, pulling cookies out when they are still slightly wet in the center. They will look fluffy while baking and flatten once cooled, creating a crispy outside and chewy inside.
