To make these delightful cookies, start by preheating your oven to 350°F.
In a medium bowl, combine 2 ½ cups of flour, 1 teaspoon of baking powder, 1 teaspoon of baking soda, and ½ teaspoon of salt. Set aside.
In a large bowl, mix together 2 cups of granulated sugar with the zest of 3 to 4 limes. Work the zest into the sugar until the oils are released and the sugar is fragrant with lime. Cream 1 ¼ cups of softened unsalted butter with the lime-infused sugar until light and fluffy. Add in 2 eggs, one at a time, and mix until incorporated. Then add the fresh juice of the 3 to 4 limes and 2 teaspoons of vanilla extract and mix until well combined.
Gradually mix in the dry ingredients until the batter is fully incorporated. Finally, stir in ½ cup of coconut flakes. Cover the batter and chill for 1 hour.
Using a teaspoon, scoop out a small amount of dough and roll it into a ball in the palm of your hand. Roll the ball in extra granulated sugar or place it on a cookie sheet and sprinkle the top with extra sugar.
