2(28 oz cans) whole peeled tomatoes,drained and sliced
2lbsyellow chilies,cored and sliced
1large onion,diced
3/4slab bacon,diced
1 1/2tspbacon fat
1 1/2tspHungarian Sweet Paprika
4Hungarian smoked sausages,sliced 1/4 inch thick
1tspolive oil,for cooking
1tspunsalted butter,for cooking
Salt and pepper,to taste
6cupscooked white rice,for serving
Instructions
In a large skillet heat olive oil and butter over medium heat; add onions and sauté until soft. Add bacon and sauté until slightly cooked; making sure not to crisp or overly brown the bacon.
Add tomatoes; sauté until warmed throughout. Add yellow chilies, Hungarian sweet paprika, and additional bacon fat; mixing well. Add smoked sausage; mix well and increase heat to medium high. Bring to a boil, then reduce heat to low; simmer for 30 minutes.
Serve Spicy Hungarian Sausage Goulash (Lecso) over white rice.
