Ingredients:


2 ½ cups flour

1 teaspoon baking powder

1 teaspoon baking soda

½ teaspoon salt

1 ¼ cups unsalted butter, softened

2 cups granulated sugar

3 to 4 limes, zest and juice of

2 eggs

2 teaspoons vanilla extract

½ cup coconut flakes

Extra granulated sugar for decoration

Instructions:


  • To make these delightful cookies, start by preheating your oven to 350°F.
  • In a medium bowl, combine 2 ½ cups of flour, 1 teaspoon of baking powder, 1 teaspoon of baking soda, and ½ teaspoon of salt. Set aside.
  • In a large bowl, mix together 2 cups of granulated sugar with the zest of 3 to 4 limes. Work the zest into the sugar until the oils are released and the sugar is fragrant with lime. Cream 1 ¼ cups of softened unsalted butter with the lime-infused sugar until light and fluffy. Add in 2 eggs, one at a time, and mix until incorporated.
