Vegetable & Herb Chicken Tortellini Soup

Good and easy! This will be the soup you make when you want a home cooked meal (but don’t really feel like cooking), serve with warm rolls and enjoy!

PS. If you have a large family, buy the 20 oz family size Buitoni Herb Chicken Tortellini, add more veggies and chicken stock to make about 6 to 8 servings. 

Here is how to make it. In a large stockpot over medium heat, melt 1 tablespoon of unsalted butter, add chopped onions and sauté until tender. Add minced garlic, diced carrots, and celery, sauté until tender. Season with kosher salt and freshly ground black pepper to taste, or begin with 1 teaspoon each, adjust as needed.

Add fresh baby spinach and chicken stock, stir well. Increase heat and bring stock to a rolling boil. Once stock is boiling add the prepared tortellini, reduce heat to medium high, stir pasta. Cook tortellini according to package instructions. Adjust seasonings, top with chopped fresh parsley, a sprinkle of parmesan cheese and serve.

Ingredients

  • 1 medium onion, chopped
  • 2 garlic cloves, minced
  • 2 large celery stalks, diced
  • 2 large carrots, peeled and diced
  • 3 cups fresh baby spinach
  • 6 to 8 cups chicken stock
  • 9 oz Herb Chicken Tortellini Refrigerated Pasta, I like Buitoni
  • 1 tablespoon unsalted butter
  • Salt and pepper to taste
  • Sprinkle of chopped fresh Parsley and grated parmesean cheese, to garnish on top as desired
