Hot Chicken Salad Casserole

This 1950’s classic Hot Chicken Salad Casserole is quintessential comfort food, easy to make, delicious and cozy. Gleaned from an old newspaper article, this recipe has been handed down between generations, and remains a family favorite. 

In a large mixing bowl combine the condensed Cream of Chicken Soup, lemon juice, dijon mustard, mayonnaise, salt and pepper, mix together. Add the cooked chicken, green onions, celery, green pepper, peas, and 1 cup of the cheddar cheese, mix together. Gently stir in the French Fried Onions and almonds, mix until combined. Save some onions to sprinkle on top.

Spoon mixture into a large casserole baking dish, sprinkle with remaining 1 cup of cheese and French Fried Onions. Cover with foil (spray the underside of the foil with non-stick cooking spray to keep the cheese from sticking to the foil) and bake at 375° for 30 minutes or until hot and bubbly. Enjoy!

Ingredients

  • 4 cups cooked chicken, diced
  • 1 (10 ½ oz) can condensed Cream of Chicken Soup, undiluted
  • 1 1/2 tablespoons fresh lemon juice
  • 1 1/2 tablespoons dijon mustard
  • 1/2 cup mayonnaise
  • 1 teaspoon kosher salt
  • 1 teaspoon ground black pepper
  • 3 green onions, thinly sliced
  • 1 cup celery, thinly sliced
  • 1/2 cup green pepper, chopped
  • 1 (10 oz) package frozen peas
  • 2 cups shredded cheddar cheese
  • 1/2 cup slivered almonds, chopped
  • 1 (6 oz) can French Fried Onions

Instructions

  1. In a large mixing bowl combine the condensed Cream of Chicken Soup, lemon juice, dijon mustard, mayonnaise, salt and pepper, mix together.
