Fall Harvest Salad

Seasonal recipes are a joy to make this time of year, and this amazing Fall Harvest Salad with its sweet, tart, and spicy flavors is top on my list. It’s easy enough to make for a family dinner, yet gorgeous enough to serve at a dinner party. The combination of sweet pears and apples, tart goat cheese and dried cranberries, with peppery radishes and homemade spiced pecans, will deliver fall flavor perfection. Dress with a simple vinaigrette and enjoy!

FALL HARVEST SALAD

Ingredients

  • Salad
  • 8 cups spring mixed greens
  • 2 pears, sliced
  • 2 apples, sliced
  • 2 radishes, thinly sliced
  • ¾ cup spiced pecans
  • ¾ cup crumbled goat cheese
  • ½ cup dried cranberries
  • Simple Vinaigrette
  • 3 tablespoons champagne vinaigrette
  • 1 teaspoon finely minced shallot, optional
  • 1 teaspoon minced fresh garlic
  • 1 teaspoon dijon mustard
  • ½ teaspoon kosher salt
  • ½ teaspoon black pepper
  • ½ cup extra virgin olive oil

Instructions

  1. Assemble greens and the following six ingredients on a large platter. To a small size mason jar add ingredients for the vinaigrette. Secure lid and shake well until blended together. Adjust seasonings to taste. Ladle desired amount of vinaigrette over salad, toss gently, and serve.
