Healthy And Hearty Fall Harvest Salad

Fall Harvest Salad
- 8 cups spring mixed greens
- 2 pears sliced
- 2 apples sliced
- 2 radishes thinly sliced
- ¾ cup spiced pecans
- ¾ cup crumbled goat cheese
- ½ cup dried cranberries
- 3 tablespoons champagne vinaigrette
- 1 teaspoon finely minced shallot optional
- 1 teaspoon minced fresh garlic
- 1 teaspoon dijon mustard
- ½ teaspoon kosher salt
- ½ teaspoon black pepper
- ½ cup extra virgin olive oil
Assemble greens and the following six ingredients on a large platter. To a small size mason jar add ingredients for the vinaigrette. Secure lid and shake well until blended together. Adjust seasonings to taste. Ladle desired amount of vinaigrette over salad, toss gently, and serve.
