Ingredients:

8 cups romaine lettuce chopped


Corn Layer

1 (14 oz) can corn, drained

1 red pepper, diced small

1 yellow pepper, diced small

1 orange pepper, diced small

1 teaspoon paprika


Guacamole Layer

1 cup chunky guacamole

½ cup salsa verde (green salsa)

¼ cup fresh lime juice

¼ cup fresh cilantro, chopped

Tomato Layer

1 cup cherry tomatoes, quartered

½ cup red onion, diced small

½ cup fresh cilantro, chopped

1 teaspoon freshly ground black pepper


Dressing

½ cup sour cream

½ cup mayonnaise

½ cup salsa verde

½ cup scallions, chopped

¼ cup fresh lime juice


Topping

2 cups shredded Mexican Cheese blend

1 can black olives, drain, rinsed & halved

Top with a sprinkle of fresh cilantro, optional

INSTRUCTIONS:


  • Layer 1 - In a glass bowl place lettuce as the bottom layer.
  • Layer 2 - Prepare corn mixture. In a small bowl, mix together the corn, diced red, yellow, and orange peppers, and paprika. Spoon prepared corn mixture over the lettuce.
  • Layer 3 - Prepare the guacamole mixture. In a small bowl, mix together the chunky guacamole, salsa verde, fresh lime juice, and fresh cilantro. Spoon prepared guacamole mixture over the corn layer.
  • Layer 4 - Prepare the tomato mixture. In a small bowl, mix together the tomatoes, red onion, fresh cilantro, and black pepper. Spoon prepared tomato mixture over the guacamole layer.
  • Layer 5 - Prepare the dressing mixture. In a small bowl, mix together the sour cream, mayonnaise, salsa verde, scallions, and fresh lime juice. Spoon prepared dressing mixture over the tomato layer.
  • Layer 6 - Sprinkle shredded Mexican cheese blend over the dressing layer.
  • Layer 7 - Sprinkle the black olives over the cheese layer. Top with a touch of fresh cilantro if desired. Enjoy!


For the tomato layer, mix together the quartered cherry tomatoes, diced red onion, chopped cilantro, and black pepper. Spoon the tomato mixture over the guacamole layer.
