CAST IRON SKILLET CHICKEN


Cast iron skillet chicken, easy to make, requires minimal prep time, and results in a flavorful and juicy chicken dish that is sure to become a staple in your weekly meal rotation. To start, preheat your oven to 375°F. Next, take 4-5 chicken leg quarters, making sure to keep the skin on. Place them in a large cast iron skillet, along with two medium onions cut into one-inch wedges and five peeled garlic cloves. Drizzle the chicken and vegetables with olive oil and sprinkle with coarse salt and freshly ground black pepper, adjusting to your personal taste preferences.


Bake the chicken uncovered in the oven for 40-45 minutes. If desired, baste the chicken with the pan drippings a couple of times during the cooking process. Once the chicken has cooked for 45 minutes, increase the oven temperature to 400°F and bake for an additional 10-15 minutes to achieve a crispy skin on the chicken.

Ingredients:


4-5 Chicken leg quarters, skin on

3 Tablespoons Olive oil, add more or less

1 Tablespoon Coarse salt, add more or less

1 Tablespoon Freshly ground pepper, add more or less

Instructions:


  • Preheat oven to 375°F. In a large cast iron skillet place chicken leg quarters, onions, and garlic. Drizzle with olive oil, sprinkle with coarse salt and freshly ground black pepper.
  • Bake uncovered at 375°F for 40-45 min. Baste chicken with pan drippings a couple of times if desired. Increase oven temperature to 400°F and bake for another 10-15 minutes for a nice crispy skin.
  • Alternatively, to check chicken for doneness, insert an instant read digital thermometer into the thigh area, making sure to avoid touching the bone. The internal temperature should read 180°F for a leg quarter (170°F for breasts, and some say 165°F in general for all chicken). If unsure, make sure juices run clear and not pink.

Alternatively, you can use an instant read digital thermometer to check the chicken for doneness. Insert the thermometer into the thickest part of the chicken thigh, making sure to avoid touching the bone. The internal temperature should read 180°F for a leg quarter (170°F for breasts, and some say 165°F in general for all chicken). If unsure, make sure juices run clear and not pink. Once the chicken is done cooking, remove it from the oven and let it rest for a few minutes. This will allow the juices to redistribute throughout the chicken and ensure that it stays juicy and flavorful.
