Molly’s Pumpkin Walnut Bread


As autumn arrives, it’s the ideal season to indulge in some delightful pumpkin-infused baking. One of my all-time favorite pumpkin recipes is Molly’s Pumpkin Walnut Bread. This cherished recipe was generously passed down to our sorority sisters’ mommy group by my dear sorority sister, Molly. She has always been, and continues to be, an exceptional cook, and I’m forever grateful she shared this gem with me. It was an act of culinary kindness that I hold dear to this day, and I’ve cherished this recipe ever since; it’s nothing short of perfection.


This recipe is not only easy to make but also yields two delightful loaves of pumpkin bread, making it ideal for sharing with friends and family. The combination of spices and walnuts imparts a warm, comforting flavor that’s perfect for those crisp autumn days.


To make Molly’s Pumpkin Walnut Bread, you’ll need sugar, all-purpose flour, baking powder, baking soda, salt, cinnamon, cloves, nutmeg, eggs, vegetable oil, water, cooked mashed pumpkin, and coarsely chopped walnuts.

Molly’s Pumpkin Walnut Bread

Ingredients:


1 ½ cups sugar

1 ⅔ cups all purpose flour

¼ teaspoon baking powder

1 teaspoon baking soda

¾ teaspoon salt

1 teaspoon cinnamon

1 teaspoon cloves

1 teaspoon nutmeg

2 eggs, well beaten

½ cup vegetable oil

½ cup water

1 cup cooked mashed pumpkin

½ cup coarsely chopped walnuts

Instructions:


  • Preheat oven to 325°F.
  • Mix all dry ingredients. Add egg, oil, water, pumpkin and beat until well blended. Add the walnuts. Pour batter into two butter and floured 7 inch loaf pans.
  • Bake for 50-60 minutes or until a toothpick inserted in the center comes out clean. Cool for ten minutes in the pan, then remove bread to a rack. Enjoy!

Start by preheating your oven to 325°F. In a large bowl, combine all the dry ingredients. Add the well-beaten eggs, vegetable oil, water, and cooked mashed pumpkin to the dry mixture, and beat until well blended. Lastly, fold in the coarsely chopped walnuts until fully incorporated.


Divide the batter evenly into two 7-inch loaf pans that have been greased with butter and lightly dusted with flour. Bake for 50-60 minutes or until a toothpick inserted into the center comes out clean. Once the bread is done, allow it to cool in the pans for ten minutes before transferring it to a cooling rack to cool completely.


Once your bread has cooled, it’s time to enjoy! You can serve it as is or warmed with a bit of butter. This bread also freezes well, making it perfect to enjoy throughout the fall and winter months.
