Molly’s Pumpkin Walnut Bread

Fall is upon us and it’s the perfect time to start baking with pumpkin! One of my favorite pumpkin recipes is Molly’s Pumpkin Walnut Bread. This recipe was handed down to me from my sorority sister Molly, who was then and to this day one of the most amazing cooks I’ve ever known. I was grateful she shared this recipe with me and I have loved it ever since.

This recipe is easy to make and yields two delicious loaves of pumpkin bread, making it perfect for sharing with friends and family. The combination of spices and walnuts gives it a warm, comforting flavor that is perfect for chilly fall days.

To make Molly’s Pumpkin Walnut Bread, you’ll need sugar, all-purpose flour, baking powder, baking soda, salt, cinnamon, cloves, nutmeg, eggs, vegetable oil, water, cooked mashed pumpkin, and coarsely chopped walnuts.

First, preheat your oven to 325 degrees. Mix all of the dry ingredients together in a large bowl. Add the well-beaten eggs, vegetable oil, water, and cooked mashed pumpkin to the dry ingredients and beat until well blended. Finally, add the coarsely chopped walnuts and mix until combined.

Pour the batter into two butter and floured 7-inch loaf pans. Bake for 50-60 minutes or until a toothpick inserted in the center comes out clean. Once the bread is done, cool for ten minutes in the pan, then remove the bread to a rack to cool completely.

Once your bread has cooled, it’s time to enjoy! You can serve it as is or warmed with a bit of butter. This bread also freezes well, making it perfect to enjoy throughout the fall and winter months.

Ingredients

  • 1 ½ cups sugar
  • 1 ⅔ cups all purpose flour
  • ¼ teaspoon baking powder
  • 1 teaspoon baking soda
  • ¾ teaspoon salt
  • 1 teaspoon cinnamon
  • 1 teaspoon cloves
  • 1 teaspoon nutmeg
  • 2 eggs, well beaten
  • ½ cup vegetable oil
  • ½ cup water
  • 1 cup cooked mashed pumpkin
  • ½ cup coarsely chopped walnuts
