Fresh Tomato Basil Pasta

How To Make It
- Wash tomatoes and basil. Prep your ingredients; dice tomatoes, chop onion, mince garlic, and julienne basil, set aside.
- In a large stockpot heat 2 tablespoons of olive oil over medium heat, add onions sauté until translucent. Add garlic, sauté for a few minutes just until soft, making sure it does not burn.
- Add diced tomatoes, remaining 2 tablespoons of olive oil, salt and pepper to taste, mix well.
- Bring mixture to a boil then reduce the heat to low, simmer until tomatoes soften and release their juices about 20-30 minutes. Add julienned basil, adjust salt and pepper to taste, and mix well.
- Add even more basil if you’d like, I always end up doing that, smells too good!
- Prepare pasta according to package directions. Serve over prepared spaghetti, and top with parmesan cheese as desired. Enjoy!

- 20 vine-ripened tomatoes diced
- 1 large onion chopped
- 5 garlic cloves minced
- 1 cup basil julienned
- 4 tablespoons extra virgin olive oil
- salt & pepper to taste
- parmesan cheese garnish to taste
- 1 lb spaghetti cook according to package directions
