Sausage Egg Puff with Jalapeño & Scallions

Nothing beats a quick and delicious brunch dish to welcome in the weekend. This is one of those that can be whipped up in under an hour from start to finish. Sausage Egg Puff with Jalapeño & Scallions, simple, easy, and yummy! Serve with a dollop of sour cream and your favorite hot sauce, a side of fresh fruit, and a mimosa! A great start to a lazy weekend. Cheers!

Sausage Egg Puff with Jalapeño & Scallions

Ingredients

  • 1/2 lb pork breakfast sausage, cooked
  • 5 large eggs
  • 1 cup cottage cheese
  • 1 cup grated Monterey Jack cheese
  • ¼ cup scallions, chopped
  • ¼ cup Jalapeño, finely diced
  • ¼ cup all purpose flour
  • ½ teaspoon baking powder
  • ½ teaspoon kosher salt
  • ½ teaspoon freshly ground black pepper

Instructions

  1. Preheat oven to 350 F. Spray a small baking dish or 9-inch quiche or pie pan with non-stick cooking spray.

  2. Cook pork sausage until nicely browned, set aside to cool.

  3. Combine all ingredients into a medium mixing bowl: cooled cooked sausage, eggs, cottage cheese, grated cheese, scallions, jalapeño, flour, baking powder, salt and pepper, mix well and pour into prepared baking dish.

  4. Bake uncovered for 35 minutes.

  5. Serve with a dollop of sour cream and your favorite hot sauce. Enjoy!
