Nothing beats a quick and delicious brunch dish to welcome in the weekend. This is one of those that can be whipped up in under an hour from start to finish. Sausage & Scallion Egg Puff, simple, easy, and yummy! Serve with a dollop of sour cream and your favorite hot sauce, a side of fresh fruit, and a mimosa! A great start to a lazy weekend. Cheers!

Brunch Sausage & Scallion Egg Puff

  • 5 large eggs
  • 1 cup cottage cheese
  • 1 cup grated Monterey Jack cheese
  • ¼ cup all purpose flour
  • ½ teaspoon baking powder
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon freshly ground black pepper
  • ¼ cup scallions, chopped
  • 1/2 lb pork sausage, cooked


  1. Preheat oven to 350 F. Spray a small baking dish or 9-inch quiche or pie pan with non-stick cooking spray. Cook pork sausage until nicely browned, set aside to cool. Combine all ingredients into a medium mixing bowl: eggs, cottage cheese, grated cheese, flour, baking powder, salt and pepper, scallions, browned sausage, mix well and pour into prepared baking pan. Bake uncovered for 35 minutes. Serve with a dollop of sour cream and your favorite hot sauce. Enjoy!
