Sausage & Scallion Egg Puff
- 5 large eggs
- 1 cup cottage cheese
- 1 cup grated Monterey Jack cheese
- ¼ cup all purpose flour
- ½ teaspoon baking powder
- 1/2 teaspoon kosher salt
- 1/2 teaspoon freshly ground black pepper
- ¼ cup scallions, chopped
- 1/2 lb pork sausage, cooked
Preheat oven to 350 F. Spray a small baking dish or 9-inch quiche or pie pan with non-stick cooking spray. Cook pork sausage until nicely browned, set aside to cool. Combine all ingredients into a medium mixing bowl: eggs, cottage cheese, grated cheese, flour, baking powder, salt and pepper, scallions, browned sausage, mix well and pour into prepared baking pan. Bake uncovered for 35 minutes. Serve with a dollop of sour cream and your favorite hot sauce. Enjoy!
