Spicy Hungarian Sausage Goulash (Lecso)

Ingredients:

2 (28 oz cans) whole peeled tomatoes, drained and sliced, (or fresh tomatoes)

2 lbs Anaheim or yellow chilies, cored and sliced

1 large onion, diced

3/4 slab bacon, diced

1 1/2 tsp bacon fat

1 1/2 tsp Hungarian Sweet Paprika

4 Hungarian smoked sausages, sliced 1/4 inch thick

1 tsp olive oil, for cooking

1 tsp unsalted butter, for cooking

Salt and pepper, to taste

6 cups cooked white rice, for serving

Instructions:


  • In a large skillet heat olive oil and butter over medium heat; add onions and sauté until soft. Add bacon and sauté until slightly cooked; making sure not to crisp or overly brown the bacon.
  • Add tomatoes; sauté until warmed throughout. Add yellow chilies, Hungarian sweet paprika, and additional bacon fat; mixing well. Add smoked sausage; mix well and increase heat to medium high. Bring to a boil, then reduce heat to low; simmer for 30 minutes.
  • Serve Spicy Hungarian Sausage Goulash (Lecso) over white rice.

Heat a large skillet over medium heat, and add a teaspoon each of olive oil and unsalted butter. Sauté the diced onions until they’re soft, then add the diced bacon and sauté until it’s slightly cooked. Next, add the sliced tomatoes to the skillet and sauté until they’re warmed throughout. Add the sliced yellow chilies, Hungarian sweet paprika, and additional bacon fat, and mix well.


Finally, add four sliced Hungarian smoked sausages and increase the heat to medium-high. Bring the mixture to a boil, then reduce the heat to low and simmer for 30 minutes. While the goulash is simmering, prepare your white rice for serving. Once the goulash is ready, serve it over the white rice and enjoy!
