Need a weeknight lasagna that’s quick, easy, and rich in flavor? Here’s a simple recipe that can be made in five easy steps for the busy home cook; 1) prepare your meat sauce, 2) cook your noodles, 3) prepare your cheese sauce, 4) assemble, and 5) bake. Lasagna should be enjoyed on a weeknight, and this recipe does the trick!

Here’s How To Make It

Start with your meat sauce. Over medium heat brown ground beef in a large skillet until cooked throughout, drain excess fat. Add finely diced onion and garlic, sauté a few minutes until translucent. Add crushed tomatoes, tomato paste, dried parsley, dried oregano, Italian seasoning, salt, and pepper; mix well. Partially cover sauce and simmer on low for 20 minutes or until sauce has thickened, stirring occasionally.

Cook Lasagna noodles until “al dente.” Drain and place in cold water until ready to use. In a separate bowl combine eggs, ricotta or cottage cheese, and parmesan cheese, stirring well. Set aside.

Prepare to assemble your lasagna. Spread about ½ cup of meat sauce in a greased 13 x 9-inch baking dish. Then layer half of each; noodles, ricotta or cottage cheese mixture, mozzarella cheese, and meat sauce. Repeat layers as your baking dish allows. Cover and bake at 350 degrees for 30 minutes; let stand 10 minutes before serving.

You can assemble Lasagna and freeze before baking for another nights dinner.

Ingredients

  • 1 1/2 lbs ground beef
  • 2 garlic cloves , minced
  • 1 medium onion , finely chopped
  • 1 (16-ounce) can crushed tomatoes, undrained
  • 2 (6-ounce) cans tomato paste
  • 1 tsp dried parsley flakes
  • 1 tsp dried basil
  • 1 tsp Italian seasoning
  • 1 tsp kosher salt
  • 1/2 tsp pepper
  • 1 (16-ounces) package lasagna noodles
  • 1 large eggs , beaten
  • 3 cups ricotta or cream-style cottage cheese
  • 3/4 cup grated Parmesan cheese
  • 1 lb sliced mozzarella cheese
