Old Fashioned Oatmeal Cookies With Vanilla And Cinnamon

When it comes to cookies, there’s nothing quite like the classic taste and texture of old-fashioned oatmeal cookies. The combination of the warm, comforting flavors of cinnamon and vanilla with the hearty texture of rolled oats is a match made in dessert heaven. And while there are countless variations of oatmeal cookie recipes out there, this one stands out for its simplicity and deliciousness.

This recipe calls for just a handful of simple ingredients that you likely already have on hand in your pantry and fridge. With a prep time of just 15 minutes and a cook time of 10 minutes, these cookies come together quickly and easily. And with a yield of four dozen cookies, there’s plenty to share with friends and family (if you can bring yourself to part with them!).

To start, you’ll cream together softened unsalted butter with both light brown sugar and granulated sugar until the mixture is smooth. Then, beat in two large eggs and a tablespoon of vanilla extract for added depth of flavor. In a separate bowl, mix together flour, cinnamon, baking powder, baking soda, and salt until well combined. Add the flour mixture to the creamed mixture and blend together thoroughly before stirring in the oats.

PREP TIME: 15 MINUTES
Chill Time: 30 minutes
COOK TIME: 10 MINUTES
OVEN TEMPERATURE: 375°F
yields: 4 dozen

Ingredients:

1 cup unsalted butter, (2 sticks) softened

1 cup light brown sugar, firmly packed

1 cup granulated sugar

2 large eggs

1 tbsp vanilla extract

2 cups all-purpose flour

1 tsp cinnamon

1 tsp baking powder

1 tsp baking soda

1/2 tsp table salt

2 cups old-fashioned rolled oats

Instructions:

  • Cream butter and sugars until smooth, beat in eggs and vanilla.
  • In a separate bowl add flour, cinnamon, baking powder, baking soda, and salt. Mix ingredients together until well combined.
  • Add flour mixture into creamed mixture and blend together thoroughly. Stir in oats.
  • Chill batter for 30 minutes (optional). Preheat oven to 375°F and prepare your baking sheet. Grease baking sheet, or use non-stick foil, parchment paper, or a Silpat liner.
  • With a teaspoon or a small ice cream scooper, place a rounded teaspoon full of cookie dough on prepared baking sheet, allowing room to spread.
  • Bake for approximately 10 minutes, pulling cookies out when they are still slightly wet in the center. They will look fluffy while baking and flatten once cooled, creating a crispy outside and chewy inside.

Chilling the batter for 30 minutes is optional, but it can help to enhance the texture of the cookies. Preheat your oven to 375°F and prepare your baking sheet by greasing it, using non-stick foil, parchment paper, or a Silpat liner. With a teaspoon or small ice cream scooper, place a rounded teaspoon of cookie dough on the prepared baking sheet, allowing room for the cookies to spread.

Bake the cookies for approximately 10 minutes, or until they are still slightly wet in the center. As they cool, the cookies will flatten, creating a crispy outside and chewy inside. The aroma of cinnamon and vanilla will fill your kitchen, making it hard to resist sneaking a cookie (or two) before they’ve had a chance to cool completely.

Whether you’re looking for a comforting treat to enjoy with a cup of tea or coffee, a lunchbox snack for your kids, or a homemade gift for a loved one, these old-fashioned oatmeal cookies with vanilla and cinnamon are a classic choice that will never go out of style. So preheat your oven, gather your ingredients, and get ready to bake up a batch of these irresistible cookies. Your taste buds will thank you!

"I ADORE this recipe! It is easy to make and the results are Fabulous!!! You can get the perfect balance of chewy center and slightly crunchy edge. (At least the way I bake them) I do not like chocolate so I add toffee chips for me and chocolate chips for my family sometimes."
