Homemade Weeknight Lasagna That’s Quick & Easy

Need a weeknight lasagna that’s quick, easy, and rich in flavor? Here’s a simple recipe that can be made in five easy steps for the busy home cook; 1) cook your noodles, 1) prepare your meat sauce, 3) prepare your cheese sauce, 4) assemble, and 5) bake. Lasagna can be enjoyed on a weeknight, and this easy and homemade recipe does the trick!

Here’s How To Make It

  1. Cook Lasagna noodles until “al dente.” Drain and place in cold water until ready to use.
  2. Over medium heat brown ground beef in a large skillet until cooked throughout, drain excess fat. Add finely diced onion and garlic, sauté a few minutes until translucent. Add crushed tomatoes, tomato paste, basil, Italian seasoning, salt, and pepper, mix well. Partially cover sauce and simmer on low for 15-20 minutes or until sauce has thickened, stirring occasionally.
  3. In a separate bowl combine the ricotta or cottage cheese, parmesan cheese, eggs, and parsley, stirring well.
  4. Spread about 1/2 cup of meat sauce in a greased 13 x 9-inch baking dish. Then layer half of each; noodles, cheese mixture, mozzarella cheese, and meat sauce. Repeat layers as your baking dish allows. Cover and bake at 350 degrees for 30 minutes; let stand 10 minutes before serving.

You can assemble the Lasagna and freeze before baking for another night.

  • 1 1/2 lbs ground beef
  • 2 garlic cloves , minced
  • 1 medium onion , finely chopped
  • 1 (16-ounce) can crushed tomatoes, undrained
  • 2 (6-ounce) cans tomato paste
  • 2 tbsp fresh chopped basil or (1 teaspoon dried basil)
  • 1 tsp Italian seasoning
  • 1 tsp kosher salt
  • 1/2 tsp pepper
  • 1 (16-ounces) package lasagna noodles
  • 3 cups ricotta or cream-style cottage cheese
  • 3/4 cup grated Parmesan cheese
  • 2 large eggs , beaten
  • 2 tbsp fresh chopped parsley or (1 teaspoon dried parsley flakes)
  • 1 lb sliced mozzarella cheese
